I started out hosting my own SHOUTcast station...W.A.K.D. on a 10mbps connection and a 5watt FM transmitter, then when we started up iWebRadio we were on Live365. Until the CRB fiasco, then moved to Shoutzone. Out of all of them, i'd have to say Shoutzone was the best because it didnt limit us to proprietary players and we get way better sound out of 64k MP3Pro than most do on 80k and above regular MP3. And the prices were very reasonable. It's easier for the DJ's to use with SAM and we can literally build pages around it.

Just my opinion

I use Mouse2Mouse and Fast-Serv. Both hosts have been excellent. Mouse2Mouse is also very good to let you know in advance if anything may interrupt their service. In a years time this has happened twice. Both times service was down only 15 minutes. Not to mention the M2M staff are really nice people as well. Fast-Serv is a little more expensive, but I have had no downtime at all on their servers.

I've used others in the past year with some not so good results. I would recommend M2M and Fast-Serv highly.
